INSTANT KHAMAN DOKHLA
INSTANT KHAMAN DOKHLA : It is a traditional Gujarati snack

It is a traditional Gujarati snack, a savoury steamed cake made from gram flour. It can be served as a tea time snack or as an appetizer for parties.

INGREDIENTS

  • Besan or gram flour          –   1 cup
  • Sooji                               –   2 tbsp
  • Lemon juice                     –   1 tbsp
  • Curd                                –   2 tbsp(not very sour)
  • Sugar                              –   1 tsp
  • Ginger paste                    –   1-2 tsp(as per taste)
  • Green Chilly paste            –   1-2 tsp(as per taste)
  • Turmeric pd.                    –   2 pinches
  • Hing                                –   1 pinch
  • Salt                                 –   1 tsp
  • Oil                                   –   1 tbsp
  • Water                              –    3/4 to 1 cup
  • Eno salt                           –    1 sachet or 1 tsp

FOR TEMPERING

  • Mustard seeds                    –      1 tsp
  • Sesame seeds                    –      1 tsp
  • Curry leaves                       –      2-3 sprigs
  • Slit green chillies                –      2 or 3
  • Water                                –      1/3 cup
  • Sugar                                –     1 tsp
  • Lemon juice                       –      1/2 tsp
  • Oil                                    –     1 tbsp

FOR GARNISHING

  • Chopped coriander leaves     –  2 tbsp
  • Grated fresh coconut             –  2 tbsp

METHOD

  1. Combine all the ingredients together except eno salt in a bowl and mix well adding water as required. Stir to a smooth batter without any lumps.
  2. Meanwhile keep the steamer on the stove and let the water starts boiling.
  3. Add the eno to the batter and whisk the batter until it is well blended (it becomes airy and frothy)
  4. Immediately pour the batter into a greased pan and steam it for 20-25min. (insert a toothpick to check if its properly cooked, if it comes out clean its ready)
