Chicken soup is always a healthy option when you are exhausted or recovering from a disease. This hot soup which is healthy and filling can be cooked easily
Ingredients:
1/2 cup minced garlic (about 25 cloves)
2 carrots, peeled and sliced 1/4 inch thick
1 celery rib, minced
Salt and pepper
1 teaspoon fresh tomato paste
6 cups unsalted chicken broth
2 bay leaves
1 cup wheat noodles
8 ounces boneless, skinless chicken breasts, cut into small cubes.
1/4 cup chopped fresh parsley
Method
Heat oil and garlic in medium-low heat and stir until garlic is light golden . Add carrots, , celery, and 1/4 teaspoon salt. Cook, until vegetables are softened .
Add tomato paste. Stir in broth and bay leaves. Stir in noodles and chicken cubes and bring to simmer. Reduce heat to medium-low, cover, and cook until noodles is softly cooked. Stir in parsley and season with pepper to taste. Serve hot
