It is a traditional Gujarati snack, a savoury steamed cake made from gram flour. It can be served as a tea time snack or as an appetizer for parties.
INGREDIENTS
- Besan or gram flour – 1 cup
- Sooji – 2 tbsp
- Lemon juice – 1 tbsp
- Curd – 2 tbsp(not very sour)
- Sugar – 1 tsp
- Ginger paste – 1-2 tsp(as per taste)
- Green Chilly paste – 1-2 tsp(as per taste)
- Turmeric pd. – 2 pinches
- Hing – 1 pinch
- Salt – 1 tsp
- Oil – 1 tbsp
- Water – 3/4 to 1 cup
- Eno salt – 1 sachet or 1 tsp
FOR TEMPERING
- Mustard seeds – 1 tsp
- Sesame seeds – 1 tsp
- Curry leaves – 2-3 sprigs
- Slit green chillies – 2 or 3
- Water – 1/3 cup
- Sugar – 1 tsp
- Lemon juice – 1/2 tsp
- Oil – 1 tbsp
FOR GARNISHING
- Chopped coriander leaves – 2 tbsp
- Grated fresh coconut – 2 tbsp
METHOD
- Combine all the ingredients together except eno salt in a bowl and mix well adding water as required. Stir to a smooth batter without any lumps.
- Meanwhile keep the steamer on the stove and let the water starts boiling.
- Add the eno to the batter and whisk the batter until it is well blended (it becomes airy and frothy)
- Immediately pour the batter into a greased pan and steam it for 20-25min. (insert a toothpick to check if its properly cooked, if it comes out clean its ready)
