Kallappam (hoppers) is a kind of rice pancake traditionally prepared using toddy(kallu). As toddy is not readily available nowadays we can use yeast instead.

INGREDIENTS

Raw rice 2 cups
Cooked rice 1 cup
Grated coconut 1-11/2 cups
Instant yeast 1/2 tsp
Cummin seeds 1/2tsp
Sugar 1 tbsp or as needed
Salt to taste

METHOD

Soak the rice for 5-6 hrs and grind it to a smooth paste along with the cooked rice. Do not add too much water, the batter should be thick.
Coarsely grind the coconut and cummin and add this to the rice mixture. Add yeast, and sugar and mix everything well. Cover it and allow it to ferment for 6-8 hrs. Before preparing hoppers add salt and stir well. The batter should be similar to the consistency of idli batter.
Heat a tawa or pan and grease it .Ladle batter and spread slightly with the back of the ladle.(it should be thick circular shape)Cover the pan with a lid and cook. Flip over and cook the other side also or until it is lightly brown in colour.
